PRESIDENT & FOUNDER
Dan Schuman, born and raised in Milwaukee, Wisconsin moved to New York to combine his passions for music and law. While living in NYC the past nine years, he noticed that what was missing from the megalith assortment of food options was his beloved Wisconsin frozen custard. With this always on his mind, he quickly shifted career intentions and made a decision that he would personally bring the best Wisconsin frozen custard to New York, add a melt menu (this combination never seen in all 50 states or the world for that matter) and call it 5oz. factory in honor of the portion size he was accustomed to in his youth. Traveling the country for a year, he spent the time researching dairy texture and taste of all frozen desserts in the country to hone in on what he believed to be the perfect Wisconsin Frozen Custard profile. A graduate of the “Frozen Dessert Institute” Dan taught himself all aspects involving the quick service frozen dessert business.

Angela has worked in the hospitality sector for 20 years with a strong focus in food and beverage. She is committed to the future of the hospitality field and feels strongly about the importance for responsible management. A self-confessed “foodie,” and travel maven, Angela has lived and traveled in more countries than her age. Raised by a military family from Wisconsin, she is highly influenced by a strong work and personal ethic. Starting as a hostess then pastry chef in a two-star restaurant for a James Beard Award Winning Chef in New Orleans, she quickly grew to love the science and art of cooking and wine making. Her work experience in marketing, catering, hotel management and food & beverage operations has been utilized at Mark’s Restaurant Group helmed by James Beard award winning Chef Mark Militello, Republic in USQ, The Fireman Group, China Grill Management and the trendy Soho House. Recently Angela back-packed solo through the majority of Central and South America and Europe on a mission for self-discovery.
